I need to use Matrix/Element however, i dont want to use the main matrix server ( matrix.org )… I search for some servers/instances, but i dont know which server to choose. anyone can advice a server or have an opinion about it?

To add in here, what’s the ups and downs or joining a server vs hosting your own?
I’d also like to know. Control is probably the main thing.
I know the matrix.org servers are getting overloaded too.
